Last week I used my new crockpot for the very first time. Sadly, these are the kinds of things I find exciting now. Anyway let me just say that it totally rocked! A little prep work the night before and voila! a delicious and healthy meal was waiting for me when I got home from work. Now that is my kind of dinner.
I purchased this crockpot from Amazon for under $25. I was looking for something big enough to feed two people with enough for leftovers, a lid that sealed in case I ever attend a potluck and something affordable. After a little research I found the one and with my Amazon Prime membership it arrived on my doorstep in a mere two days. You really can’t beat that convenience.
For my crockpot introduction I used a recipe that I stumbled across online while in the midst of a google search resembling “easy healthy crockpot meals”. I am a complete sucker for Thai food so when I spotted this recipe on Family Fresh Meals, I was sold. Even better was that I had all of the ingredients on hand so it didn’t even require me to step foot into the grocery store (which in my opinion is the worst part of cooking).
Sadly I didn’t take any pictures during my quick prep for this dinner but I will share a few things I tweaked with the recipe. I only used 1 lb of chicken breasts, 1 large red bell pepper, 1/2 a large red onion, and a little extra lime juice. I added a healthy dose of sriracha to my serving but I think next time I will add it directly into the sauce before cooking. If you like your food spicy like I do, I definitely suggest you try it that way- and let me know how it goes. I served this up over brown rice but it would probably be really tasty over Asian noodles or even spaghetti squash. This recipe has already been added to my Pepperplate account and I will definitely be having it again the next time I get a Thai food craving!
