Wednesday Fodder: Crockpot Thai Peanut Chicken

Last week I used my new crockpot for the very first time. Sadly, these are the kinds of things I find exciting now. Anyway let me just say that it totally rocked! A little prep work the night before and voila! a delicious and healthy meal was waiting for me when I got home from work. Now that is my kind of dinner.

I purchased this crockpot from Amazon for under $25. I was looking for something big enough to feed two people with enough for leftovers, a lid that sealed in case I ever attend a potluck and something affordable. After a little research I found the one and with my Amazon Prime membership it arrived on my doorstep in a mere two days. You really can’t beat that convenience.

For my crockpot introduction I used a recipe that I stumbled across online while in the midst of a google search resembling “easy healthy crockpot meals”. I am a complete sucker for Thai food so when I spotted this recipe on Family Fresh Meals, I was sold. Even better was that I had all of the ingredients on hand so it didn’t even require me to step foot into the grocery store (which in my opinion is the worst part of cooking).

Sadly I didn’t take any pictures during my quick prep for this dinner but I will share a few things I tweaked with the recipe. I only used 1 lb of chicken breasts, 1 large red bell pepper, 1/2 a large red onion, and a little extra lime juice. I added a healthy dose of sriracha to my serving but I think next time I will add it directly into the sauce before cooking. If you like your food spicy like I do, I definitely suggest you try it that way- and let me know how it goes. I served this up over brown rice but it would probably be really tasty over Asian noodles or even spaghetti squash. This recipe has already been added to my Pepperplate account and I will definitely be having it again the next time I get a Thai food craving!

A Well Spent Sunday

Sunday is the Lord’s Niners Day.IMG_0272

I spent yesterday afternoon at Levi’s Stadium in Santa Clara watching the Niner game with some good friends. After a long but fun weekend I wasn’t sure I was feeling up for the game but dragged myself anyway. I’m glad I did because we couldn’t have asked for a more beautiful day for football. No better way to end an already great weekend than with a 49er win! Now, just have to get through the rest of today and tomorrow before some much needed time off for Thanksgiving. Aren’t Mondays are so much easier knowing its a short week?

Sometimes You Just Really Need In-N-Out for Lunch

In N Out…and I do not feel an ounce of remorse about it. I mean, just look at it! But I will admit that yesterday I ordered my cheeseburger protein style and skipped the fries in the name of being not a total fat ass healthier. If you haven’t tried protein style before, I highly recommend it. All the taste but half the guilt. It’s a win-win.

I took this picture a few years back, in the early days of Instagram. I believe this was the third or fourth photo I ever posted. To this day I don’t think I have ever seen In-N-Out burger perfection quite this beautiful. For those of you not from the lucky states of CA, NV, AZ, UT or TX, I’m sorry. Guess you will just have to dream for now.

What To Do When You Find a Mysterious Bra In Your Boyfriend’s Bed.

So, what do you do?

  • Text him “WTF?!”
  • Stay in Boston for the rest of your planned trip and act like everything is fine
  • Carve pumpkins and make cinnamon rolls
  • Go out drinking with his friends and be the fun girlfriend
  • See Gone Girl
  • Go to brunch
  • Drink wine and cook dinner together
  • Tell the airport bartender the reason you are crying into your Pinot Gris is because you are en route to your Mother’s funeral…(sorry, Mom)
  • None of the above

If you answered none of the above, you are already a step ahead of me. Congratulations. Clearly I am no expert in what TO do but rather what NOT to do in such a situation. But, that is a story for another time.

This quote perfectly sums up how I felt in that moment of realizing that no, that is not my black, size 34c* bra. Even though I saw it coming, it still hurt. Maybe that’s because I never thought the “it” would be another woman’s bra in my boyfriend’s bed, though deep down I knew the end of us (whatever we had become by that point) was near. Call it a woman’s intuition but I just knew. I stressed and stressed before that final cross-country trip, my gut telling me that something just wasn’t right. He told me I was making up problems where none existed. So, I boarded the plane and off I went to my fate.

So…I Guess I Am Starting a Blog.

Well, here I am sitting at my kitchen table, white wine in hand, writing my very first blog post. I’ve become the cliché.

Cliché or not, all I know is that I’m genuinely excited to start this new journey. I have finally decided to take control of my future and my happiness. It’s been too long since I’ve felt this motivated or excited to do anything except eat something fattening or drink. Sad, but true. After nearly two years of corporate desk grinding, also known as “that great gig in tech marketing that pays well and will build your resume”, I need something to call my own. Everything I write or post on here is mine. And damn, that feels good!

Where does my mind wander? Blogs, books, random articles I stumble upon, writing in my journal or the notepad on my iphone. I think it’s as close to a “passion” as any for me. This blog will be a grand experiment of trial and error. I hear that’s a good thing. Time to refill my wine glass!
